Chai Concentrate

I’ve been wanting to try this recipe for a while and decided to make it as a Christmas gift for someone. Of course, I had to taste it and make sure it was good, and it was even better than I expected. Chai doesn’t need all these spices to taste good – it’s delicious with just cardamom (this is my basic recipe), but it’s also fun with all these other spices. It is nice to have the concentrate because you just add milk and warm it up.


4-½ cups water
10 tea bags (I used decaf Red Rose)
1 stick cinnamon
1 1-inch piece fresh ginger, chopped
7 whole cardamom pods
1 whole star anise
10 whole cloves
¼ tsp freshly ground black pepper
½ tsp freshly ground nutmeg
1 tsp orange zest
1/2 cup brown sugar
1 Tbsp honey
1 Tbsp vanilla

Bring the water to a boil. Add the tea and spices and steep for 15-20 min. Strain and add the sugar, honey and vanilla. Add equal amounts concentrate and milk; heat and serve.
