Slow Cooker Chickpeas

It’s easy (and cheaper) to make a batch of dried chickpeas (or garbanzo beans) in the slow cooker instead of buying canned ones. You can use some right away, and put the rest in the freezer for later. This makes about 6-7 cups of cooked chickpeas, or roughly 3 cans worth.

Pick over and rinse 3 cups dried chickpeas. Place in a small slow cooker (3.5 qt). Add 5 cups water. Cover and cook on high for 4 hours. Check once or twice to make sure there is enough water and stir the chickpeas. Rinse the cooked chickpeas in cold water to stop the cooking, and drain them.
