Scandinavian Rhubarb Cake

2 large stalks rhubarb

1 1/4 cups flour

1 1/2 tsp baking powder

1/2 tsp nutmeg (or 1/4 tsp ground mace)

1/4 tsp cardamom

1/2 tsp almond extract

2 eggs

1 cup sugar, plus 1-2 Tbsp for the rhubarb

1/4 cup melted butter, plus more for cake pan

1/3 cup milk

Slice rhubarb into bite-sized pieces and sprinkle with 1-2 Tbsp sugar. Set aside. In a small bowl, mix flour, baking powder and spices. In a large bowl, beat 2 eggs with 1 cup sugar until pale and fluffy. Add almond extract, melted butter and milk and stir until well mixed. Add flour mixture and stir until smooth. Pour batter into a buttered and floured 9 inch round cake pan. Scatter rhubarb pieces over the top. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean.
