Espresso Granita

The first complete sentence I learned in Italian was, “Una granita per favore”.

Granitas are sweet icy desserts–kind of like a snow cone, but the ice itself is flavored rather than added on at the end. It’s one of the easiest frozen desserts to make.  You don’t need anything special to be able to make it: just a pan, a freezer, and a fork.

2 cups hot espresso or very strong coffee (I used strong decaf coffee)

1/2 cup sugar

1 tsp vanilla

whipped cream and dark chocolate shavings, for serving

Stir the sugar into the espresso until it dissolves. Add the vanilla. Pour into a baking pan (I used a 9-inch round metal cake pan) and freeze for 1 hour (set a timer). Take the mixture out and mash it with a fork to break up any frozen bits. Freeze for another hour or so and mix again. After another hour you should be able to start scraping it with the tines of the fork into light flakes of granita. Transfer the granita to a covered container and keep in the freezer until ready to serve.

Scoop some into a small bowl or glass. Top with sweetened whipped cream and chocolate curls.
