Bacony Roasted Chickpeas

These are similar to crunchy spiced chickpeas, but even better because they taste like bacon and have little bacon bits mixed in.  They are very addictive.

2 – 15oz. cans chickpeas/garbanzo beans (drained, rinsed, and patted dry)

3 slices bacon (raw)

2 bay leaves

kosher salt and pepper

1 tsp Old Bay seasoning

Line a large rimmed baking sheet with aluminum foil. Spread the chickpeas over and scatter with chopped bacon slices (it’s easy to cut them up with kitchen scissors). Add bay leaves and season with kosher salt and fresh ground pepper. Bake at 375 degrees F, stirring occasionally, until crispy. Toss with Old Bay seasoning.
