Banana Bread

For a couple of days whenever I got in the car, I thought I smelled bananas. Finally, a little investigating turned up a bag of bananas that had been forgotten in there after the last grocery trip…not sure how long ago that was, but I had a great excuse to try out a new banana bread recipe!  And it’s a keeper. You can’t have too many banana bread recipes, can you?

1 3/4 cups flour

1 1/2 tsp baking soda (sifted)

3/4 tsp kosher salt

3 large eggs

1 1/2 cups sugar

1 cup mashed ripe bananas (about 2 large)

3/4 cup vegetable oil

Spray 3 small (5×3 inch) loaf pans with oil. Mix flour, baking soda, and salt in a medium bowl. Whisk eggs, sugar, bananas, and oil in a large bowl. Add dry ingredients to the wet ingredients and mix until just combined.   Divide among the 3 pans and bake at 350 degrees F for about 40-50 min. (Or, you can use one regular loaf pan and bake for 60-70 min.)

Run a knife around the inside of the pans and turn out onto a rack to cool.
