Kale Caesar Salad

This tangy salad has raw kale marinated in the dressing for an hour. It’s pretty tasty! Even if it isn’t real caesar salad…

Juice of 1 lemon (and a little zest too, if you want)

4 Tbsp extra-virgin olive oil

2 garlic cloves, pressed

salt and fresh ground pepper to taste

large pinch red pepper flakes

1 bunch kale, washed, rib removed, and torn in bite-sized pieces

2/3 cup fresh grated Parmesan cheese (or Pecorino or Asiago)

homemade croutons (recipe below)

In a large bowl, whisk together the lemon juice, 4 Tbsp olive oil, garlic, salt and pepper, and red pepper flakes. Add kale and toss to coat. Add most of the cheese and mix. Let sit for an hour or more so the kale has a chance to soften a little. While you wait, make the croutons. Top salad with remaining cheese and homemade croutons.

Homemade croutons:

Cut bread in uniform cubes.

Toss with some olive oil and salt.

Spread on baking sheet and bake at 350 degrees F until golden brown, about 20-25 min. Let cool.
