Breakfast Quinoa

A few months ago, I tried quinoa for the first time when I made this recipe, and now this dish is a regular breakfast (or dinner) for me. I like that it’s so easy to make ahead and just reheat and add an egg for the next day’s breakfast.

Slice 1 onion and add to frying pan with a little oil over medium or medium-low heat. Slice 1 package apple chicken sausages and add to the pan with the onion. Cook until onion is softened and sausages are browned.

Meanwhile, add 1 cup well-rinsed quinoa and 2 cups water to a saucepan. Cover, bring to a boil, reduce heat and simmer for 15 min. Remove from heat and let sit 5 min.

Divide the quinoa and sausage onion mixture among 4 bowls. Top each with a fried egg (or scrambled eggs if you prefer).
