Granola
This is my usual granola recipe. It’s supposed to cook in 15 min. but it always takes me a lot longer–30-45 min., maybe more. I like it really toasted.
Mix in a large bowl:
3 cups rolled oats (old fashioned or quick cooking)
1 cup chopped walnuts and/or pecans
1/2 cup chopped almonds
1/2 cup shredded coconut
1/4 cup sunflower seeds
1/4 cup sesame seeds
In a small saucepan, combine and heat until warm:
1/3 cup vegetable oil
1/4 cup maple syrup
1/4 cup honey
Pour over the oat and nut mixture and spread on a large baking sheet. Bake at 325 degrees, stirring every 5-15 minutes until it is toasted as much as you want (15-45+ min.). Stir in 1 cup raisins and/or dried cranberries or cherries.
