Marinated Feta

marinated feta

1/2 cup extra virgin olive oil

1 shallot, sliced thin

1/4 tsp dried oregano

1/8 tsp red pepper flakes

2 tsp lemon zest

4 oz feta, cut into bite-sized cubes

Mix half the oil with all ingredients-except for the feta-in a small saucepan. Cook over low to med/low until shallot is softened, about 12 min. Remove from heat and add feta. Cover and let sit for about 1 1/2 hours. Stir in the rest of the oil and serve with pita wedges or slices of french bread. (You can store  this in the fridge for about a week, but serve it at room temperature.)
