Mini Lemon Loaves

This is my favorite version of this recipe because it’s the most lemony.

6 Tbsp butter, softened

1 cup sugar

2 eggs

1 cup milk

2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 Tbsp lemon zest (about 2 lemons)


1/3 cup freshly squeezed lemon juice

3 Tbsp sugar

Cream butter, sugar, and 1 egg together. Add second egg. Add milk. Beat well. Add the rest of the ingredients (except glaze). Mix well. Divide among 4 greased mini loaf pans. Bake at 350 degrees F for 30 min. or until a toothpick inserted in the center comes out clean. Poke holes all over the top of the hot loaves. Mix lemon juice and sugar and drizzle the glaze over the warm loaves. Let them cool in the pan for 10 min. then remove to wire racks to finish cooling. (You could also use this recipe to bake one regular size loaf for about 1 hour.)
