Simple Carrot Soup

This soup is so yummy and easy to make. It’s sweet and the creamy garnish really adds to the flavor.

Melt 2 Tbsp butter in pot, add 1 sliced onion and thyme sprig. Cook over medium low about 10 min. (don’t brown). Add 1 lb. sliced carrots and salt to taste. Cook 5 min. Add 3 cups chicken broth, preferably homemade. Bring to boil then lower heat to simmer. Cook until carrots are soft, about 30 min. Purée in a blender (carefully). Add salt and pepper to taste.

Garnish with a bit of cream mixed with salt pepper and chopped parsley or other fresh herb.
