Baked Tofu with Orange and Thyme

I’ve never been a real big tofu fan, but this was pretty tasty!

Baked tofu

1 lb. firm tofu, cut into 1/2 inch slices

3 Tbsp freshly squeezed orange juice

2 Tbsp soy sauce

1 Tbsp balsamic vinegar

2-3 Tbsp extra virgin olive oil

6 sprigs fresh thyme

1/2 tsp freshly grated nutmeg

First get the extra water out of the tofu by laying the slices between several clean dish towels. Weigh down with a heavy pan for about 30 minutes, wringing out the towels if needed.

Coat a baking dish with olive oil. Arrange the thyme sprigs in the dish. Arrange the tofu slices over the thyme.

Mix the orange juice, soy sauce, and vinegar together and pour over the tofu. Sprinkle with nutmeg.

Bake at 350 degrees F until tofu is golden brown and all the marinade has been absorbed, 30 to 40 min. Serve warm or at room temperature.
