Migas (Scrambled eggs and tortilla chips)

This is another breakfast recipe that would be good any time of day. It’s very adaptable. I give suggested ingredients below, but you can use up various fresh or jarred vegetables, beans, corn, any kind of onion or pepper, bits of salsa, cheese, avocado. You can use fresh tortilla chips, but this is the recipe I usually make when I’ve got a few handfuls of stale tortilla chips/crumbs at the bottom of the bag.


Melt butter or oil in frying pan and sauté minced red onion and red bell pepper over medium-high heat until softened, about 4 min. When vegetables are almost done, whisk eggs in a bowl and add broken tortilla chips (about 1/4 cup for 2 eggs). Set aside.

Add minced garlic and jalapeno pepper (to taste) to the onion and peppers. Cook until fragrant. Add egg mixture and reduce heat to medium. Push eggs back and forth constantly until they begin to cook. When finished, remove from heat and add shredded cheddar cheese. Serve with salsa, cilantro, and avocado, or any other relevant garnishes you have on hand.
