Carrot Cake with Orange Cream Cheese Frosting

This is another great recipe that deserves to be passed along from Mrs. Fledderjohann 🙂

Carrot cake


2 cups flour

2 tsp baking soda

1/2 tsp salt

2 tsp cinnamon

3 eggs, well beaten

3/4 cup oil

3/4 cup buttermilk

1 cup sugar

2 tsp vanilla

2 cups grated carrots (grated yourself–not the pre-grated kind from the store)

3 oz. coconut

1 cup chopped walnuts

8 oz. crushed pineapple, drained

Mix dry ingredients. In a separate bowl, combine eggs, oil, buttermilk, sugar, and vanilla; beat till smooth. Stir in flour mixture and the rest of ingredients. Pour batter into 2 greased and floured cake pans. Bake at 350 degrees F for 35-40 min. Poke some holes in the cakes with a toothpick and immediately spread Buttermilk Glaze (recipe below) evenly over layers. Cool in pans 15 min. Remove from pans and let cool completely. Spread Orange Cream Cheese Frosting (recipe below) between layers and on top and sides of cake. Store in refrigerator after icing.

Buttermilk Glaze:

1 cup sugar

1/2 tsp baking soda

1/2 cup buttermilk

1/2 cup butter

1 Tbsp light corn syrup

1 tsp vanilla

Combine 1st 5 ingredients in pan. Bring to boil; cook 4 min. stirring often. Remove from heat and stir in vanilla.

Orange Cream Cheese Frosting:

1/2 cup butter, softened

8 oz. cream cheese, softened

1 tsp vanilla

2 cups icing sugar

1 tsp orange zest

1 tsp orange juice

Mix cream cheese and butter and beat with electric mixer until light and fluffy. Add the rest and beat till smooth.

    Thanks, Emily. As I was reading this, I thought, “Wow, that sounds like the one I learned to make from my Southern mother.” It’s so delicious, and you’ve given me the idea to make it during this season! Mrs. F

  2. I wrote this down years ago when you made it for dessert, and it’s been on my “to make” list ever since! I made it for a progressive dinner we did on Friday and it was delicious. By the way, what size pans do you usually use? And do you usually make it as 3 layers?

    Made this last night and it turned out delicious!!! It was moist and flavorful. The nuts gave it a nice texture and it was perfectly sweet. The orange cream cheese frosting was just perfect! Thank you for sharing it. Even a novice cook like me can seem like an impressive baker. 🙂
