Brown Sugar Cookies

This is one of my favorite cookies – especially straight out of the freezer where I keep my stash. The frosting is a little tricky to work with, so it’s easier to stick with circles rather than cut the cookies in more complicated shapes.

Brown sugar cookies

Cookies:

1 cup butter, softened

1/2 cup packed brown sugar

1/4 cup sugar

1 tsp vanilla

2 1/4 cups flour

1/2 tsp salt

Beat together butter, sugars, and vanilla with an electric mixer (med. speed) until light and fluffy. Add flour and salt and beat at low speed until well mixed. Form into a ball and roll out on a well-floured surface until between 1/4 and 1/2 inch thick. Cut out 2-inch round circles and place on ungreased cookie sheets. Bake at 300 degrees F for 20 to 25 min, or until golden. Cool before frosting.

Frosting:

3/4 cup packed brown sugar

1/4 cup butter

1 1/4 cup icing sugar

1-2 Tbsp half and half (or milk)

1 tsp vanilla

Melt butter and brown sugar in saucepan over medium heat, stirring constantly. Remove from heat and add remaining ingredients. Stir till smooth.
