Spicy Vegetable Couscous

Spicy, as in full of spices, not hot-spicy. You could make it hot if you add more cayenne or some hot peppers though. This is a great side or vegetable main dish and it’s good warm or cold. It would be great for a picnic.

1/2 tsp vegetable oil

2 green onions, chopped

1 red bell pepper

2 tomatoes, chopped

1 zucchini, diced

1 clove garlic, minced

1 cup chick peas, cooked (I use canned chick peas, rinsed, cooked for about an hour, and drained)

1 cup boiling water

1/4 tsp salt

1/2 tsp curry powder

1 tsp ground cumin

1/8 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp cayenne

1 cup couscous

2 Tbsp fresh parsley, chopped

Heat the oil in a medium skillet and saute the vegetables for about 5 minutes. Add garlic and cook another minute. Set aside.

Combine the rest of the ingredients (except parsley) in a medium saucepan. Mix, cover and let stand 5 minutes, until liquid is absorbed. Add the vegetables and parsley and fluff with a fork.
