Broccoli with Peanut Sauce

This broccoli is so good it could almost be a meal by itself. Really.

3 Tbsp water

1/4 tsp salt

1/8 tsp pepper

1 Tbsp creamy peanut butter

1 Tbsp hoisin sauce

2 tsp fresh lime juice

2 garlic cloves, minced

3/4 tsp Sriracha

2 Tbsp vegetable oil

1 3/4 lb broccoli (1 large bunch)

1/4 cup fresh basil, chopped

2 Tbsp chopped roasted peanuts

Cut broccoli florets into 1 1/2 inch pieces. Trim and peel stems and cut on the bias into 1/4-inch thick slices about 1 1/2 inches long. Mix the salt, pepper and water in a bowl until salt dissolves. In a separate bowl, mix together the peanut butter, hoisin sauce, lime juice, garlic, brown sugar, and chili sauce.

In a large nonstick skillet, heat the oil over medium-high until just starting to smoke. Add the broccoli stems and cook without stirring for about 2 minutes, until browned on the bottom. Add the florets and cook again without stirring until they just start to brown, 1-2 min. longer. Add the water mixture and cover the skillet. Cook until broccoli is bright green but still crisp, about 2 min. Add the peanut butter mixture and basil and toss until evenly coated and heated through, about 30 seconds. Transfer to a serving dish and top with chopped peanuts.
