Regular Blueberry Muffins

I’m calling these regular blueberry muffins to distinguish them from these other blueberry muffins (with the cinnamon crumble topping), but please don’t think less of them. They are really good and just what I imagine when I think of a blueberry muffin. And they are so easy to make.

2 cups flour

2 tsp sugar

1 Tbsp baking powder

1/2 tsp salt

1 egg

1 cup milk

1/4 cup vegetable oil

1/2 cup sugar

1 cup fresh or frozen blueberries

Mix flour, sugar, baking powder and salt. In another bowl, mix egg, milk and oil. Add egg mixture to flour mixture. Stir until all flour is moistened (batter will be lumpy). Combine the rest of the sugar with the blueberries and fold into the batter. Spoon into greased or paper-lined muffin cups. Bake at 400 degrees F for 20 to 25 minutes until golden.

(I was supposed to add the 2 tsp sugar to the dry ingredients and the 1/2 cup to the berries but I did it backwards…I don’t think it matters.)
