Small Frittata with Swiss Chard and Feta

I made my favorite Sauteed Swiss Chard recipe the other night, and even though I wanted to eat the whole thing because it is so good, I thought some leftover Swiss chard would be really tasty in a frittata. So I saved about 1/3 cup and found this recipe. It was worth it!


Whisk together:

3 eggs + 3 egg whites

2 Tbsp milk

2 Tbsp chopped Kalamata olives


Place some oil-packed sun-dried tomatoes in the bottom of an 8-inch oven-safe skillet. Sprinkle with crumbled rosemary and basil. Heat over medium heat. Add egg mixture.  Top with 1/3 cup cooked greens (or 3 cups chopped fresh spinach). Cover and cook until eggs are almost set. Sprinkle with 1/2 cup crumbled feta and place under broiler for a few minutes until eggs are completely set. Let sit 5 min. before eating.
