Chicken Tabouli with Tahini Drizzle

Tabouli is a delicious Mediterranean/Middle Eastern salad. In this recipe (adapted from the September 2011 issue of Cooking Light magazine), it’s an easy main dish.

Chicken tabouli

1/2 cup bulgur

boiling water

1 cup cooked chicken, shredded

1 tomato, diced

1/2 – 1 cup chopped fresh parsley

chopped fresh mint (as much as you want)

1-2 chopped green onions

1 clove garlic, minced

1 tsp olive oil

salt and pepper to taste

Tahini Drizzle:

2 Tbsp tahini

2 Tbsp plain Greek yogurt

1 1/2 Tbsp fresh lemon juice

1/8 tsp salt

Rinse bulgur several times and drain. Pour boiling water over to cover. Let sit while you prepare the other ingredients (check to make sure it is still covered in water as it absorbs some of it). When the bulgur is cooked (about 30 min.), drain any excess water and combine with the other ingredients. Mix the ingredients for the drizzle together and drizzle over the top. Good served warm or cold.
