Orange Spiced Shortbread

These are delicious and easy to make. If you can’t get the dough to form into a ball, don’t worry, just press it into the pan anyway. It’ll still come out alright.

1 1/8 cup flour

1/3 cup sugar

½ tsp grated orange peel

¼ tsp nutmeg

pinch of salt

½ cup + 2 Tbsp butter, chilled and cut in small pieces

Mix all ingredients except butter. Cut in butter with pastry blender until mixture resembles coarse crumbs. Form dough into ball. Press into greased 8×8 pan. Prick dough with a fork at 1-inch intervals. Bake about 30 min. or until light golden brown. Immediately cut into 2-inch squares and then diagonally into triangles. Let cool completely in pan.
