Slow Cooker Beef and Barley Soup

December 31, 2011

This soup is tasty, very easy to make, and will even leave you with some money to spend on other things…like napkins.

Beef and barley soup

1 lb. beef stew meat, diced small

1 ¼ cup sliced or chopped carrot

1 ¼ cup chopped onion

¾ cup chopped celery

5 cup water

1 tsp parsley flakes

¼ tsp pepper

1 tsp sugar

2 Tbsp beef bouillon powder

½ c. pearl barley

1-2 Tbsp tomato paste

1 can (15 oz.) diced tomatoes

Place in slow cooker.  Stir and cover.  Cook on low for 8 to 10 hours or on high for 4 to 5 hours.

(Recipe adapted from Company’s Coming Slow Cooker Recipes by Jean Paré.)
