Gravy (Turkey or Chicken)

My favorite gravy.

Roast a turkey.

Pour most of turkey dripping into a glass measuring cup, leaving a little bit in the pan.  Let the cup of drippings sit for a few minutes. Most of the grease will rise to the top. Scoop off and discard.

Add flour to the drippings that were left in the pan and brown the flour over low to medium-low heat, stirring constantly. Once browned, slowly stir in the rest of the drippings and some potato water, as needed to get the right consistency. Season with pepper, soy sauce (adds color and salt).  Could also add gravy mix if needed, chicken bouillon, or anything else you need to get it to taste and look good.
