Cranberry Orange Muffins

Cranberry Orange Muffins

3 ½ cups flour

½ cup sugar

5 tsp baking powder

½ tsp salt

3 eggs

grated peel of one orange

1 cup milk

½ cup orange juice

2/3 cup cooking oil

2 cups cranberries, chopped

up to ½ cup of additional sugar

Mix dry ingredients together in a large bowl.  In another bowl mix all other ingredients except cranberries and additional sugar.  Add wet to dry ingredients.  Stir until just moistened.  Add additional sugar to chopped cranberries.  Fold berries into batter.  Put in lined muffin tins.  Bake at 375 degrees F for 20 minutes or until done.  Makes about 20.
