Oatmeal Chocolate Chip Cookies

oatmeal cookies

1 c. butter, softened

2 c. packed brown sugar

2 large eggs

1 tsp vanilla

2 c. flour

1 tsp baking powder

½ tsp baking soda

2 c. quick-cooking rolled oats

2 c. semi-sweet chocolate chips

¾ c. medium unsweetened coconut

Beat butter and sugar in large bowl until light and creamy.  Add eggs, 1 at a time, beating well after each addition.  Add vanilla.  Beat.

Combine flour, baking powder and soda in small bowl.  Add to butter mixture.  Stir well.  Add remaining ingredients.  Stir until well distributed.  Drop, using 2 tbsp for each, about 2 inches apart, onto greased cookie sheets.  Bake in 350 degree F oven for 8 to 10 min. until golden.  Let stand on cookie sheets for 5 min. before removing to wire racks to cool.  Freezes well.

I also tried a few variations: chocolate chip with dried cherries, and white chocolate chip with dried cranberries.
