Dad’s Fried Spaghetti

This is one of my favorite things to have for breakfast, but it’s good anytime of the day. I usually cook a little extra spaghetti so that I have leftovers to make this.  If you’ve had pasta carbonara, it’s kind of similar, but this is much easier (and doesn’t have a creamy sauce). You could also add bacon and/or parmesan cheese if you want.

Heat leftover cooked thin spaghetti or angel hair pasta in a frying pan with a little butter, oil, or bacon fat. Chop it up a little with the spatula as you stir it.

When pasta is warm, add an egg or two and scramble it in the pan. Cook until egg is done. Season with salt and pepper.

This was a recent adaptation — I added leftover sauteed mushrooms, an extra egg, and some crumbled feta. Best fried spaghetti yet!
