Easy Tomato and Orzo Soup with Meatballs and/or Pesto

This is pasta and tomato sauce in soup form. The recipe called for a dollop of pesto, but I thought meatballs would be great in it. You can do either or both. Leftover soup gets pretty thick because the pasta keeps absorbing water, so it won’t be very soupy the next day unless you add more broth.

1 jar roasted garlic and onion tomato sauce

3 cups chicken broth

½ tsp each finely chopped fresh rosemary and thyme (or 1/4 tsp dried)

½ cup orzo

pesto and/or meatballs

Combine all ingredients except orzo and pesto/meatballs in a saucepan. Bring to a boil. Add orzo and meatballs if using. Cook about 9 minutes, until orzo is cooked and meatballs are heated through. Place a dollop of pesto in each bowl, if using.
