Chocolate Peanut Butter Chip Cookies

You can bake these as cookies or bars. I highly recommend making the bars. Save yourself time.  They turn out better as bars anyway—softer and chewier, and they don’t crumble as much as the cookies do when you bring them somewhere to get them out of your house because you can’t stop eating them (it could happen!). Either way, these are great!

Chocolate Peanut Butter Chip Cookies

2 cups flour

¾ cup cocoa powder

1 tsp baking soda

½ tsp salt

1 ¼ cups butter (2 ½ sticks)

2 cups sugar

2 eggs

2 tsp vanilla

1 2/3 cups peanut butter chips (10 oz. pkg)

Mix flour, cocoa, soda and salt in one bowl. Beat butter and sugar with a mixer until fluffy. Add eggs and vanilla and beat well. Gradually add flour mixture until well mixed. Stir in peanut butter chips.

Drop by rounded teaspoon onto ungreased cookie sheet or spread in foil-lined and greased 15×10 inch jelly roll pan (I used a 9×13 and made some cookies with the extra dough). Bake at 350 degrees F for 8 to 9 minutes for the cookies or about 20 minutes for the bars. (Don’t overbake). Cool the cookies slightly before removing to a wire rack/ Leave the the pan on a wire rack to cool completely before cutting into bars.
