Banana Cake

This recipe is dedicated to my students who came over and made cake…and then lost the recipe. Here it is, again… 🙂 It really is a wonderful cake. Now none of us will lose the recipe.

½ cup butter, softened

1 ½ cups sugar

2 large eggs

2 ¼ cups flour

1 tsp baking powder

¾ tsp baking soda

½ tsp salt

¼ cup buttermilk or sour milk (just add a little vinegar or lemon juice to sour regular milk)

1 cup very ripe bananas, mashed

Cream together the butter and sugar until fluffy; beat the eggs in thoroughly.  Sift together the dry ingredients and stir them in alternately with the milk and bananas. Pour into the greased and floured cake pan, 13×9, or two layer pans.  Bake at 350 degrees F until the cake tests done, about 25 to 30 minutes for the layers, 40 to 45 for the long pan.

To make the icing, start with some soft butter (about 2 Tbsp) and mix in some icing sugar (powdered sugar) to make a stiff icing. Thin it with a little bit of milk (about a Tbsp), stir until smooth, add some more sugar and maybe a little more milk. Taste it. If it tastes wonderful, it’s done. If it’s not quite right just keep adding more sugar and milk until it is.  (If you are making a lot of icing, start with more butter. This much will probably cover a 9×9 cake with a thin layer.)
