Easy Apple Cinnamon Muffins
These muffins are very tasty even without the extra sugary-buttery crumble topping. This time I tried using some applesauce (just over 1/3 cup) to replace 1/3 cup of the oil. They turned out great. This makes about 18 large muffins and they freeze well.
3 cups flour
1 1/2 cups sugar
1 tsp salt
4 tsp baking powder
2 tsp cinnamon
2/3 cup vegetable oil (can replace half with applesauce)
2/3 cup milk
2 eggs
2 apples, cored and chopped small
Optional crumble topping:
1/2 cup sugar
1/3 cup flour
1/2 cup butter, cubed
1 1/2 tsp cinnamon
Mix flour, sugar, baking powder, cinnamon, and salt in a large bowl. Mix eggs, milk, oil (and applesauce, if using) in another bowl, then add to dry ingredients. Stir till just combined. Fold in apples. Spoon batter into muffin cups. For the topping, mix the dry ingredients together in a small bowl and then mix the butter in with a fork. Sprinkle over muffins before baking.
Bake at 400 degrees F for about 20 min, or until a toothpick inserted in the center comes out clean.
