Dijon Potato Salad

Here’s another yummy potato salad.

Potato salad

1 1/2 lb small red potatoes

2 Tbsp extra virgin olive oil

1 Tbsp dijon mustard

1 Tbsp white wine vinegar

2 green onions, chopped

coarse salt

freshly ground black pepper

Boil the potatoes until tender (about 15 min.). Whisk the oil, mustard, and vinegar together.  Add the chopped green onions and the hot drained potatoes. Season with salt and pepper to taste.  Serve hot, room temperature, or cold.
