Turkey Burgers

These are some big burgers. This recipe will make 2 of them.

3/4 pounds ground turkey

1/8 cup dry bread crumbs

1/8 cup grated parmesan cheese

1/8 cup chopped fresh parsley

1 green onion, chopped

1/4 tsp plus a pinch salt

1/8 tsp pepper

1 Tbsp milk

1/2 egg, beaten (this is what happens when you cut recipes in half…just make scrambled eggs for breakfast tomorrow)

Mix all ingredients together and form into 2 patties, each about an inch thick.

Heat 1 Tbsp oil in a non-stick frying pan over medium heat. Cook the burgers for about 5 minutes. Turn and top each burger with a slice of provolone cheese. Cook until done, about 6 minutes longer.

Serve the burgers on focaccia spread with mayo and pesto and topped with sliced tomato.
