Tabouli Salad

½ cup bulgur (cracked wheat)

1 cup chopped tomatoes

1 cup chopped cucumbers

½ cup chopped green onions

1 cup chopped flat leaf parsley

½ cup chopped fresh mint leaves

1/3 cup fresh lemon juice

1/3 cup extra virgin olive oil

1 clove crushed garlic

salt and pepper to taste

Rinse bulgur several times.  Cover with boiling water and set aside for 30 minutes.  Finely chop all the vegetables and herbs.  Mix with lemon juice, oil, salt and pepper.  Squeeze out excess water from bulgur and add to the vegetables.  Mix and refrigerate one hour before serving.
