Grated Radish Salad

This one is from The Book of New Israeli Food by Janna Gur.  Through this recipe I discovered that radishes taste best when grated and doused in lemon juice.

2-3 large radishes, peeled and grated

½ cup cracked green olives

¼ cup freshly squeezed lemon juice

coarse sea salt and fresh ground white pepper, to taste

2-3 Tbsp good olive oil

Mix the radishes, olives, lemon juice, salt and pepper and let rest for 5 minutes.  Pile onto a serving plate and pour the oil over it.  (Serves 4-6 meze portions)
