Elote (Mexican Corn on the Cob)

Cook some corn on the cob on the grill for about 12 min. or in boiling water until you think it’s done and you are ready to eat it.

Mix a few Tbsp of mayonnaise and some lime juice in a bowl.  In another bowl, mix:

2 Tbsp parmesan cheese

1/2 tsp chili powder

1/4 tsp cayenne powder

1/4 tsp cumin

pinch of salt

Spread the mayonnaise mixture on the corn and then sprinkle with the cheese mixture.  Enjoy!

If you are still hungry, I highly recommend having more corn for dessert…
