Cooking 101 – Day 1: Muffins

This summer I taught a cooking class to eight middle schoolers for one week.  Here’s what we learned…

Basic muffins with chocolate chips

The first day we made a basic muffin recipe and added some chocolate chips.  After that demonstration the kids made another batch on their own, adding their choice of apple slices, raisins, and/or cinnamon.

Basic Muffins

1 ¾ cups flour

¼ cup sugar

2 ½ tsp baking powder

¾ tsp salt

1 well-beaten egg

¾ cup milk

1/3 cup vegetable oil

Sift dry ingredients into a bowl; make a well in the center. Combine egg, milk, and oil. Add all at once to dry ingredients. Stir quickly just till dry ingredients are moistened (don’t over stir). Fill greased muffin pans 2/3 full (or use paper liners). Bake at 400 degree F for 20 to 25 minutes. Makes about 10 muffins.

Optional: Add up to 1 cup berries, chopped fruit, chocolate chips, or ½ to ¾ cup dried fruit to batter.
