Chocolate Chip Pumpkin Bread
I found this recipe on the blog What Megan’s Making. It’s really good. I increased the chocolate chips a little (why not use the whole bag?). I also had about 1/3 cup of applesauce in my fridge, so I replaced some of the oil with that (maybe that compensates for the extra chocolate chips…).
Combine:
3 cups flour
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
In another bowl, beat together
4 eggs
2 cups sugar
2 cups pureed pumpkin
1 1/4 cups vegetable oil (can substitute some with applesauce)
Combine the wet and dry ingredients and fold in 2 cups chocolate chips. Bake in 2 greased loaf pans at 350 degrees F for about an hour, or until a toothpick comes out clean from the center. Cool in pan for 10 minutes before transferring to a rack to cool completely.
